David- I’ve been considering an excursion to NC coasts for some time. And I heard the water there is quite warm. Best recommendations on eateries in Sunset Beach? We’re big foodies! Hope you’re enjoying your campervan life/ Florida still? Cheers, -Thalia

Sorry for the late response Thalia. I just saw your note. The ocean here is about 60 degrees this time of year. It peaks out at about 70 in the summer. Not too bad if you’re used to cooler waters. For some, anything below 80 is chilly. We’re foodies too but rarely eat out because I’m a chef by training so I usually cook our meals. I’ve found that my meals are better then most restaurant and my wife agrees (-: The only food we regularly go out for is Indian and Thai bc I haven’t mastered those cuisines.

Oh wow! You were a chef, David? Any restaurants I would know? What types of cuisine or dishes are your favorite? Aside from Indian and Thai of course!

Lots of drugs and alcohol. The other thing I didn’t like was that they steered students towards the big corporate funders at the time like Marriott and Hyatt

Ah yes. Why is this? I don’t know if I’ll ever understand why there’s little to no encouragement to go indie. Perhaps due to the prestige? Which in return would make the institute ‘look good’?

I worked in restaurants years ago in the Wash. DC area and was in food manufacturing the last several years in Colorado before I retired. I had a wholesale gluten free bakery that sold desserts to grocery stores like Whole Foods. It's called Pie in the Sky Bakery. BTW, there are several companies with that name so you may know the name but it might not be my company (-: I sold it to my partners when I retired. Indian is definitely my favorite. I do try cooking that cuisine sometimes but I'm not very skilled at it. I need to get better at spicing. I know it's a real art form. What are your favorite cuisines Thalia?

I’m biased towards the Sumatran cuisine, which is sort of like Polynesian meets Indian food. But I could really eat Japanese food all day. I’ve always wondered how WF outsource their selection. And the seemingly amazing and artisanal packaging. Did you do everything in house, from branding to illustrations—or did you do just the production? And for some upstart friends who are curious—how did you pitch your product to WF?

I did it all and pitched to WF in my local community of Boulder Co. Then spread from there. I found if I was involved in all aspects, things went better. But that's just my style (-: I'd love to try Sumatran cuisine. Sounds wonderful. Are there any places along the east coast of the US that serve it?

I wish, David! Hard enough to find authentic Indonesian food in the US (cost of market education is one reason why it still doesn’t exist). Sumatra being a lesser known region in Indonesia, definitely has zero representation here in the US food scene. They have a fish yellow-curry dish (arsik) that is probably closer to Indian food than it is Indonesian. So you might enjoy that. Hard to get it right though. As you’d already know, having said that Thai and Indian are two of your favorites. What dishes do you normally default to when ordering out?
